Hobart MBM Domina 700 and 900 Series

When designing and creating commercial “back office” or “front of house” kitchens many factors are taken into account. The Chef or operator looks for power output, type of construction, robustness, durability, ease of cleaning, availability of spare parts, back up and service and of course value for money. The consultant or designer takes all of this into account, plus looks at ease of installation, location and type of service connection, aesthetics, and flexibility in applications of the total range made available.
MBM is not just a brand name. As a company it commenced business in 1972 and it has been a well established part of the global Hobart ITW family since 1998. The full Hobart MBM Domina range - 700 and 900 Series represents the best products available from Italy to withstand the demanding requirements of all commercial kitchens. The Domina 700 Series is suited to the cafe, aged care facility and smaller restaurant markets. The Domina 900 Series satisfies the larger more demanding kitchens where additional or larger cooking surfaces and greater burner output are required.
The standard range of Hobart MBM Domina 700 and 900 Series is provided with full AGA approval, flame failure safety systems, full stainless steel sub frame and external cabinet construction and all items are free-standing on either oven or open cupboard bases with fully adjustable stainless steel legs - cupboards doors can be provided as an option. To compliment the range of cooking equipment the Hobart MBM Domina Series offers “neutral zones” with range matching fascias, risers and bases to aesthetically and practically complete the cooking “line-up”.
The Hobart MBM Domina range
Oven Ranges - 4 and 6 open burner configurations with single or double gastronorm conforming or maxi (700 Series only) ovens under. As with all Hobart MBM Domina pieces of equipment the control knobs are easy to access whilst being recessed to avoid damage caused by passing traffic. The oven heat is thermostatically controlled and the oven chambers are porcelain coated and fully insulated for better heat retention. Interchangeable cast iron trivet pot rests are designed for durability and to suit all sizes of cooking pans. The Domina 900 Series is supplied standard with wash down drains for easy end of session cleaning of the hobs.
Target Top Range - In both the Domina 700 and 900 Series Hobart MBM offers the option of a target top which replaces 4 of the 6 open burners to give complete flexibility. Griddle Plates - The griddle plates are made of 15mm thick steel with a thick hard chrome finish to give an even heat across the compete cooking surface, to allow for ease of cleaning and to minimise the transfer of flavours from one food type to the next. Thermostatic controls allow for consistent accurate temperature control.
Pasta Cookers - The Hobart MBM Domina range includes deep well high volume pasta cookers with over flow drains and basket rests. Bulk cook off and individual reheat baskets give the Chef / operator full flexibility for product preparation.
Deep Fryers - The Hobart MBM Domina fryers have been developed in conjunction with Hobart’s American fryer division. The fryers are high volume tube style fryers using cast iron burners. The tubes, along with the fryer tanks are made from fully computer welded pre-stressed stainless steel giving high heat transfer and ensuring longevity. Char-Broilers - The lava stone Hobart MBM Domina char broilers with stainless steel grill bars give an even heat across the complete cooking surface. The grills bars can be raised at the rear to allow for “slow” cooking at a lower temperature and “faster” cooking at the front. The higher temperature at the front ensures the product is well sealed to retain juices and stay tender, whilst the raised section at the rear ensures items are cooked through at a much lower temperature with perfect presentation qualities.
Brat Pans - For kitchens where meals are produced “en masse” a tilting brat pan allows for quick sautéing of items through to production of bulk soups, stocks, sauces or slow cooking / braising of “wet” dishes. 60 litre capacity compound based pan for the 700 Series and 80 litres for the 900 Series.
Options and Accessories - Both the Domina 700 and 900 Series are available as individually configured cantilevered or island assemblies. Complete design flexibility and range of accessories to suit you or your customer’s needs - bridging support bars, cupboard doors to enclose the open bases, various basket sizes for the pasta cookers and drop on ribbed and smooth cast iron griddle plates to go over open burners on the cooking ranges.
